AGING: Aged on fine lees for 9 months, partly in a 10,000L amphora, allowing for a natural evolution. Light fining with bentonite in spring ensures protein stability. Cold stabilization in early May, followed by minimal filtration. Bottled at the end of July.

VIEW: Yellow color with clear golden reflections.

BOUQUET: Delicate and refined, offering a pleasant nose marked by great freshness.

MOUTH: Fresh and slightly tangy, combining evolving notes with a persistent mineral finesse. Elegant, charming, and well-balanced, with a long, refined finish.

FOOD PAIRING: Perfect with a fine cheese platter or seafood, including shellfish and seafood platters. Also excellent enjoyed simply as an aperitif.
