AGING: Fermentation and aging: The grapes are hand-harvested on terraces with a centuries-old history. After a 72-hour pre-maceration, fermentation takes place at a strictly controlled temperature in stainless steel tanks with daily stirring. The wine is then aged for 6 months in French oak barrels.
